The dog days of summer are upon us. It seems as good a time as any to enjoy a little bit lighter meal.
Since many gardens are full of great vegetables, that is reason enough to enjoy some of these fresh wonders. In our region cucumbers, tomatoes and onions can be seen in gardens in just about any direction you head.
A combination of these three ingredients will always lead to a success in the kitchen. An old grand slam recipe comes to mind when these veggies start getting ripe.
Research shows they all help to restore electrolytes after a hot day. Some old timers say that these are the original sports drink. This seems to be a standard recipe in these parts.
Ingredients
1 cucumber
1 tomato (about medium size) or about one hand full of cherry tomatoes
1 medium size onion (any color is fine)
Preparation
Slice above veggies and put in a bowl or container
1 tbsp salt
1 tsp black pepper
1 tbsp dried dill or fresh ½ tsp garlic powder (did
½ tsp garlic powder (did you know garlic powder and garlic salt are not the same?) 1 Cup cool tap water ½ Cup vinegar (white or apple cider)
Add above to veggies and let sit in refrigerator about 2 hours or simply put a few ice cubes in with them.
This combination makes a great side salad or you can eat it with cottage cheese. The recipe can be fine tuned to your liking and a great thing is to add veggies to it as you get them and simply pep up the brew.
Get creative and add squash, radishes, or anything else that you like. This is also a simple way to keep vegetables fresh for a few more days.
