Every now and then, a restaurant is more than its hostess, servers and kitchen staff, and while the food is good, it is the atmosphere that draws you back. During my travels, I have experienced such a place in the downtown square of Madill Okla. The Oil Spill Cafe, aptly named by the owners Tommy and Clay Allison from their ties to the oil field and roughneck lifestyles, sits nestled in the square so well, it looks like it belongs there. Upon entering, you are warmly greeted to sit. The décor is small town Americana with pictures of life in the oil field. The staff, the warm and inviting staff, treats everyone who enters like regulars and the regulars are treated like family with hugs and claps on the back.

While the Oil Spill cafe feels like a place that has been around for decades, manager Christa Chapa stopped by our table for a small visit, and shared some of the history of the restaurant since its opening in February 2018.

Our lunch was a simply affair. We had the cheeseburger with home cut french fries. I especially liked the stuffed potato — it was stuffed with brisket and cheddar cheese. Like the service, the food was warm and delightful. So, make your way by the oil Spill Cafe, I am sure they will save ya a seat. Here is a recipe that brings back my favorite comfort food from my mom’s own kitchen.

Moms pimento cheese burger

2 cups sharp cheddar cheese

8 oz cream cheese

1/2 cup mayonnaise

¼ tsp garlic powder

¼ tsp chile powder

4oz diced pimentos

salt and pepper to taste

Mix all ingredients in bowl, and top your favorite hamburger for a rich and creamy cheeseburger.
