Many families have a weekly family taco night. For the many families tired of the same old taco, here is a recipe to elevate the flavor profile.

Pulled pork tacos with Cherry-Chipotle Salsa

Ingredients:

2 teaspoon kosher salt 1 teaspoon ground cumin 1 teaspoon dried oregano 1teaspoongroundchipotle chili powder ½ teaspoon ground black pepper ½ teaspoon ground cinnamon 2 ½ pound boneless pork shoulder, trimmed and cut into 2- to 3-inch pieces.

¼ cup coconut oil 3 ½ cups fresh sweet cherries, pitted.

12 cloves garlic ¼ cup finely chopped red onion ¼ cup chopped fresh cilantro 2 tablespoon lime juice 12 - 16 5–6-inch corn tortillas, warmed Sliced radishes Lime wedges

Instructions

Step 1- In a large bowl combine 1 teaspoon kosher salt, the cumin, oregano, 1/2 teaspoon chili powder, the black pepper, and cinnamon. Add pork; toss to coat.

Step 2 - Spread coconut oil in the bottom of a 3 1/2- to 4-quart slow cooker. Place pork on top. Add 1 1/2 cups cherries and the garlic. Cover and cook on high 4 to 5 hours or low 8 to 10 hours.

Step 3 - Meanwhile, for salsa, chop remaining 2 cups cherries. In a medium bowl combine chopped cherries, onion, cilantro, lime juice, 1 teaspoon kosher salt, and remaining 1/2 teaspoon chili powder. Chill, covered, until serving time.

Step 4 - Preheat broiler. Usingaslottedspoon,remove pork to a shallow baking pan. Using two forks, shred pork. Spread evenly. Broil 4 inches from heat for 4 minutes.

Step 5 - Remove cherries and garlic from slow cooker with a slotted spoon; stir into crisped pork. Serve mixture in warm tortillas with cherry salsa, additional cilantro and red onion, sliced radishes, and lime wedges.

El Presidente margarita

Ingredients:

salt for rimming glass 2 lime wedges, divided. 3 cubes ice, or as desired 4 fluid ounces sweet-andsour cocktail mix 1 ¼ fluid ounces tequila ½ fluid ounce orangefl avored liqueur ½ fluid ounce brandy

Instructions:

Pour 1/4 to 1/2 inch of salt onto a small, shallow plate. Moisten the rim of a margarita glass with 1 lime wedge; dip the moistened rim into salt. Fill the glass with ice cubes.

Pour cocktail mix, tequila, orange liqueur, and brandy into a cocktail shaker. Squeezeinjuicefromremaining lime wedge. Cover and shake to combine. Pour into the prepared glass.
