Welcome to the summer season. While everybody is under social distancing regulations because the pandemic has activities closed, here is something fun to do at home with the family. It’s simple, cost effective and can become a new tradition in the household.
So, gather some cookie cutter molds – all different sizes and shapes – and let’s make Rice Krispy Treats. We’ll top it off and decorate with a delicious icing.
All that is needed is five simple ingredients for the no-bake squares; of course, that is not counting how many cookie cutters you grabbed.
Butter – like all good desserts, the base of great Rice Krispy Treats is butter! Portion out 3/4 cup, which is 12 Tablespoons or one and a half sticks.
Marshmallows – these treats pack extra marshmallow without falling apart. Go ahead and grab two 10-ounce bags (about 11 heaping cups) of mini marshmallows.
Vanilla Extract – this is an easy addition that turns a good Rice Krispy Treat into a great one. Only a smidge is needed. The actual amount is 1/2 teaspoon, but what a difference it makes.
Salt is another little addition that many people do not add to their Rice Krispy Treats. Like vanilla extract, salt is a super convenient ingredient and not much is needed. Just a pinch adds a depth of flavor otherwise absent from the treats.

The directions to create the delicious treats are just as simple as the ingredients. Melt the butter and marshmallows in a big pot on the stove, then remove from heat and gently stir in the remaining ingredients. A five-and-a-half-quart Dutch oven usually does the trick.
Even though the Rice Krispy Treats are good enough to eat plain, they are even more delicious with added icing. Plus, the children will have tons of fun decorating their own treats. Here is the recipe for the icing for decorations.
2 ½ cups powdered sugar
1 teaspoon vanilla extract clear
1 ½ tablespoons light corn syrup
2-3 tablespoons milk divided
food coloring gel is best
Beat powdered sugar, vanilla, corn syrup and 1 tablespoon milk in a small bowl until smooth.
Add milk a little at a time to reach desired consistency.
Stir in food coloring to reach desired color. Decorate cookies and allow frosting to set.
