Jedi Chef Travels: Just like grandma

Have you ever tasted food so down to earth and heavenly at the same time? Like grandma was in in the kitchen cooking just for you? Well, just off highway 377 south of the Red River, you will find such a place - Catfish Haven.

Upon arriving, we were greeted like family by the staff, who were super friendly, got seated and perused the menu. For our appetizer, we opted for the mushrooms, fried golden brown,andservedwithranch dressing.

The entrees were delectable. We had the grilled Cajun style fish and shrimp. The catfish was so flaky and just melted in you mouth, the shrimp grilled to perfection with the mild heat as a back note, and everything was seasoned masterfully.

This entree paired well with the fresh snapped green beans and boiled cabbage, their seasonal vegetable. The secondentreewastheseafood platter, piled high with crisp fried catfish, popcorn shrimp, and clams, with pinto beans and freshly made coleslaw. Sidenote: the meals came with hushpuppies that were crunchy on the outside, moist on the inside, and packed with flavor.

We were so full we could not even think about dessert, but the row of pies to choose from sure makes you want to leave room. Just as we were finishing our meal, the cook came over to our table to greet us and everything made sense. Their cook is a sweet grandma who has been cooking for decades. No wonder the food tastes just like food grandma used to make.

So, I hope everyone can make it out to Catfish Haven in Whitesboro, Texas. Here is a simply coleslaw recipe to get you started.

1 head green cabbage

1 head purple cabbage

3 – 4 carrots Dressing

1 cup mayonnaise

1 tbsp honey

2 tbsp apple cider vinegar

1 tsp celery seeds

1/4 tsp salt

1/4 tsp pepper

Fine chop green and purple cabbage, ribbon the carrots, then mix all dressing ingredients and mix with vegetables.
