Simple Simon Pizza

In a world inundated with pizza, there are multiple places serving their version of the best toppings and crust. I am not here to dispute any claims to fame, as I am a fan of almost every pizza out there, but I found a place in the top tier of pizza pies.

This week readers, I want to highlight a specific place down in Kingston Okla. – Simple Simons Pizza. I thought we would drop in grab a pizza and get on down the road. However, to my surprise ,they run a lunch buffet everyday except Saturdays, and even a buffet on Tuesday nights.

This newly remodeled place hosts salad fixings and a variety of choice pizzas and some killer Cinnamon sticks. But when asked what the best seller was, the owner, Pam Allen boasted that beside the classic pepperoni pizza, their Calzones were a big hit. After trying one, I can see why – yummy and full of flavor.

The pizza place offers more than just a buffet of fresh, and delicious food. They also have a menu that offers other items, even though, I can’t imagine anything else tasting as good as the Calzone.

This pizzeria has been in business for over 20 years and I am sure they will continue to serve the community a great pizza with the smiling and friendly staff far into the future. So, make it by and tell them the Jedi Chef said he would save them a seat.

Until you can make it by Simple Simons pizza, here’s a little pasta bake to try at home. It’s a family favorite at my home.

Pasta Bake

Ingredients:

8 ounces favorite pasta noodle 1 pound lean ground beef

1 onion, chopped

1 (4 ounce) can mushrooms, drained 1 (28 ounce) jar spaghetti sauce 2 cups shredded mozzarella cheese Bring a large pot of lightly salted boil water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente. Drain well.

1. Meanwhile, cook ground beef and chopped onions in a skillet over medium heat until browned.

2. In a large bowl, mix together the mushrooms, spaghetti sauce, shredded mozzarella cheese, pasta, and browned ground beef and onion mixture. Transfer to a greased, 9x13 inch casserole dish.

3. Bake at 325 degrees F (165 degrees C) for 20 minutes, or until very hot.
